I suppose both season 1 and 2's opening themes each have their own merits. "Open your mind" works on the level of it being the first season; an introduction of sorts. "Shiawase no Iro" in the second season, works on the level of giving you the feeling of a grand adventure, that season 2 is bigger (which it is, kinda) than season one
For example:
Season One: - Open Your Mind - Belldandy's arrival, earth god, Urd, Mara, Skuld, World of Elegance, and The Lord of Terror, Chibi-Urd's special, Skuld's Special
Season Two: - Shiawase no Iro - The ring, the sweater, the exorcist, Peorth, Chihiro, Troubadour, Sentaro, The two Urds (Demoness, and Goddess); Hild, the Pot, the Ninjas, Belldandy becomes a demon (for the episode only) the Time travel episode, and finally, the two specials; the ghost (shinentai, or whatever they called her) and the brough superior, and the episode about getting keiichi to tell belldandy "i love you"
And the two parter "Fighting Wings" - Ai no Hoshi. both the song, and the two part special work well together, the song really gives off the battle sense, and sells the weight and gravity of the situation in the episodes
